InstaPot Pot Roast and Potatoes

Ingredients
  • 3-4 lb beef roast
  • Salt and Pepper
  • 1 Onion, chopped or sliced
  • 1 tbsp vegetable or olive oil
  • 2 tbsp tomato pasta
  • 2 cups beef broth
  • 2 lbs potatoes, peeled and halved
  • 3 carrots, peeled and cut (or use baby carrots)
Instructions
  1. Season beef with salt and pepper on both sides.
  2. Use InstaPot on Saute setting. Heat oil and brown beef on all sides. If necessary, cut beef in half to fit.
  3. Remove beef to platter,.
  4. Add onions to pot and cook until soft, about 5 minutes.
  5. Add broth and tomato paste to pot and simmer for about 3 minutes,
  6. Add the roast back into pot,
  7. Cook on High Pressure for 45 minutes, Allow to release naturally.
  8. Add potatoes and carrots to pot, stir into the broth mixture and cook on high pressure for 45 minutes.
  9. Allow a quick release and serve hot.
