Homemade Potato Chips

  • Potatoes (1-2 small ones per person)
  • Salt
  • Oil for frying
  1. Using a mandolin slicer, slice potatoes to desired thickness.
  2. Place the slices in a pan of cold water.
  3. Allow to sit for 30 minutes.
  4. Heat the oil (I prefer to use a deep fryer)
  5. Remove from water and dry well.
  6. Add potatoes into the oil in batches.
  7. Fry until light golden brown, 2-3 minutes.
  8. Drain on paper towels.
  9. Season with Salt.
