Chicken & Peppers Calzone Recipe

  • 16 oz Pizza Dough (homemade or refrigerated)
  • 3 eggs
  • 1 Cup Ricotta Cheese
  • 1½ cup mozarella cheese, shredded
  • ½ tsp oregano
  • ½ tsp basil
  • Pinch red pepper flakes
  • Salt
  • Pepper
  • Cooked Diced chicken, about 1 cup
  • 1 Bell Pepper, diced
  • ½ small onion, diced
  1. Preheat oven to 425F.
  2. In a skillet with a little olive oil saute the pepper and onion.
  3. Salt and Pepper.
  4. Once cooked until soft, add the chicken to the pan and stir.
  5. Divide dough into 4 pieces and roll or pat into 4 circles.
  6. Mix 2 eggs, ricotta, mozarella, oregano and basil together. Reserve some basil and oregano for topping.
  7. Smear the cheese mixture on half of each dough circle.
  8. Top with chicken, peppers and onions.
  9. Fold the dough over and pinch edges closed with a fork.
  10. Beat the remaining egg.
  11. Brush over the top of dough and sprinkle with oregano and basil and red pepper flakes.
  12. Place on a lined baking sheet and bake 20 minutes or until crust is golden brown.
  13. Serve hot with marinara sauce for dipping.
