Easy Loaded Potato Soup from Baked Potatoes
- 4 large leftover baked potatoes
- 4 tbsp butter
- ¼ cup flour
- 5 cups milk, additional for thinning
- 2 cups cheddar, grated with some reserved for topping.
- Salt & Pepper to Taste
- ½ tsp onion powder
- ½ tsp celery salt
- ½ cup sour cream
- Chives
- 6 slices bacon, cooked and broken
- Dice the potatoes (skin on or off as desired) into bite size pieces.
- Melt butter in a pan over medium heat (add some bacon grease if desired)
- Whisk in flour until smooth and lightly brown (about 1-2 minutes).
- Slowly add milk and whisk constantly.
- Add potatoes, salt, pepper, celery salt and onion powder.
- Bring to a boil and reduce heat and cover and simmer for 20 minutes.
- Add cheese and sour cream.
- If necessary, add extra milk if the soup is too thick.
- Serve hot with crumbled bacon, chives and cheese.
