Easy Loaded Potato Soup from Baked Potatoes
  • 4 large leftover baked potatoes
  • 4 tbsp butter
  • ¼ cup flour
  • 5 cups milk, additional for thinning
  • 2 cups cheddar, grated with some reserved for topping.
  • Salt & Pepper to Taste
  • ½ tsp onion powder
  • ½ tsp celery salt
  • ½ cup sour cream
  • Chives
  • 6 slices bacon, cooked and broken
  1. Dice the potatoes (skin on or off as desired) into bite size pieces.
  2. Melt butter in a pan over medium heat (add some bacon grease if desired)
  3. Whisk in flour until smooth and lightly brown (about 1-2 minutes).
  4. Slowly add milk and whisk constantly.
  5. Add potatoes, salt, pepper, celery salt and onion powder.
  6. Bring to a boil and reduce heat and cover and simmer for 20 minutes.
  7. Add cheese and sour cream.
  8. If necessary, add extra milk if the soup is too thick.
  9. Serve hot with crumbled bacon, chives and cheese.
