Crispy Potato Stacks

- 4-5 potatoes
- 2 tbsp olive oil
- ¾ tsp sale
- 1 tbsp Italian Seasoning
- ¾ tsp salt
- ¼ tsp black pepper
- ½ cup shredded cheese of choice
- Cooking Spray
- Preheat oven to 375F.
- Spray muffin tin with cooking spray.
- Slice potatoes into ⅛ inch slices with mandolin slicer.
- Mix everything together in a large bowl.
- Stack slices into prepared muffin tin.
- Cover with Foil and bake 30 minutes
- Remove foil and bake an additional 15 minutes or until it's really crispy.
- Makes about 12 stacks.
