Crispy Potato Stacks

Ingredients
  • 4-5 potatoes
  • 2 tbsp olive oil
  • ¾ tsp sale
  • 1 tbsp Italian Seasoning
  • ¾ tsp salt
  • ¼ tsp black pepper
  • ½ cup shredded cheese of choice
  • Cooking Spray
Instructions
  1. Preheat oven to 375F.
  2. Spray muffin tin with cooking spray.
  3. Slice potatoes into ⅛ inch slices with mandolin slicer.
  4. Mix everything together in a large bowl.
  5. Stack slices into prepared muffin tin.
  6. Cover with Foil and bake 30 minutes
  7. Remove foil and bake an additional 15 minutes or until it's really crispy.
  8. Makes about 12 stacks.
