This dish disappeared quickly at our table last night! I’m glad I put up extras in the freezer!
Ingredients:
2 Rope Smoked Sausage, sliced
2 Yellow Squash, sliced thin
2 Zucchini, Sliced
2 Onions, Sliced
Olive Oil
Red Pepper Flakes
Thyme
Garlic
Salt
Black Pepper
Grated Parmesan
Directions
Preheat oven to 400 degrees.
Place sausage, squash, zucchini, onions in a bowl and drizzle with olive oil.
Place on a lipped cookie sheet in as thin of layers as possible.
Sprinkle with spices.
Bake for 35 minutes and sprinkle with grated parmesan.
Bake an additional 10 minutes or until parmesan begins to brown.
Serve hot.
Tip: To make an extra serving of this -double the recipe and blanch the zucchini and squash. Let cool and dry. Place in a freezer bag with onions and sausage. Freeze for a few months and then continue the rest of the recipe as directed- cooking an additional 5-10 minutes.
