This is one of our family’s favorite “dress up cake mix” recipes. It’s super easy and delicious!
Upside Down Pineapple Cupcakes

Ingredients
- White or Yellow Cake Mix + required oil, eggs, water
- 1 Large Can Pineapple chunks
- 1 Jar Cherries
- Frosting of Choice
- Cupcake Liners
Instructions
- Prepare cake mix as directed on package but replace water with pineapple juice from the canned pineapple. If there isn't enough add water to reach the proper measurement.
- Put liners in the cupcake pan. Put one chunk of pineapple and one cherry at the bottom of each cupcake liner.
- Fill with batter as directed.
- Bake according to package directions.
- Allow to cool and frost with icing of choice.
- Top with a cherry, if desired.
