I am not a big fan of new potatoes. I like my potatoes light and fluffy – like mashed potatoes with heavy cream or baked potatoes. But I had several cans of these in my pantry and they needed to be used so I decided to try and see how it turned out. If it tanked- well we’d eat boxed Mac & Cheese.
They turned out amazing! They were delicious and I can’t wait to make them again and I love that they were a set it & forget it side dish! My Slow Cooker is my absolute favorite kitchen gadget ever!
Ingredients:
2 cans (15 oz) whole new potatoes
2 tbsp olive oil
1/2 tsp rosemary, crushed
1/4 tsp black pepper
1/8 tsp garlic salt
Directions:
Place new potatoes in slow cooker. Drizzle with olive oil. Sprinkle rosemary, pepper and garlic salt over the potatoes. Turn potatoes to evenly coat. And spread as evenly as possible. The edges touching the crock of the slow cooker will get crunchy (and delicious)- so the more that touches the more delicious crunchiness!
Turn slow cooker on 4 hours high or 8 hours low.
If desired, sprinkle with grated parmesan right before serving.
