We are a taco-eating family but I’ve been working REALLY hard to mix it up and serve different, even if just slightly, things. Last night instead of the usual taco shells, meat and cheese we made Mexican Pizzas. They were a hit!
- 16 oz can refried beans
- 1 lb ground beef
- 1 pkg taco seasoning mix
- 1 tbsp oil
- flour tortillas, 3 per serving
- shredded Mexican Blend cheese
- Jar Taco Sauce
- Optional toppings; sour cream, chopped tomatoes, green onions, diced chilies, avocado, black olives
- In large skillet, brown the ground beef . Rinse fat of and add seasoning packet and water according to directions. Leave on low.
- Heat refried beans.
- Place a small amount of oil in a large skillet and heat over medium heat. Place tortilla in oil ad fry and then flip (about 10-15 seconds per side). Drain on paper towels.
- Place tortilla on plate and smear with heated beans, add in any toppings you wish.
- Top with a second tortilla and spread with ground beef and any desired toppings.
- Top with a third tortilla, smear taco sauce on top and cheese.
- If desired, heat in the oven at 350F for a few minutes to melt the cheese, however since all the items are hot it't not necessary.
