These were a HUGE hit at my house and in fact made it to the make again list!
You can boil used marinade for 3-5 minutes to cook out any issues- but honestly I just can’t do it. So I make double the marinade and use half to marinade and the other half to make the glaze.
If you’re good with boiling the marinade- you can half each of those ingredients.
- 6 chicken drumsticks
- ½ cup lime juice
- 6 tbsp soy sauce
- 4 tbs honey
- 4 tbs chipotle chile in adobo sauce
- Whisk together everything except chicken. Divide the sauce into 2 equal portions.
- Place chicken in a gallon bag and pour one of the portions into the bag. Marinade for at least 30 minutes. Discard marinade.
- Place the second portion of sauce into a blender and blend smooth. Place puree into a small sauce pan and bring to a rolling boil stirring for about 3 minutes. Remove sauce from heat.
- Place chicken in air fryer in one layer. Air fry at 400F for 20 minutes, flipping over half way and brushing with the heated glaze.
- Cook until drumsticks are cooked through to 165F. Brush with glaze again and serve.
