This is such an easy recipe and could almost be a full meal on it’s own! It tastes just like chili without the meat!
Ingredients:
3 tsp oil
1 white onion, chopped
1 green pepper , chopped
1 can Red Beans, drained
2 cups long grain rice
1 pkg McCormick’s Chili Seasoning
4 cups water (or chicken broth or mixture)
Directions:
Heat oil over med heat and add onion and peppers. Cook until tender and translucent.
Add Water, beans and McCormick chili seasoning packet. Bring to a boil.
Add 2 cups rice.
Cook according to directions of rice (Most require lowering heat, covering and cooking for 20-30 minutes)
Serve hot.
