I had three bananas that were going bad. They were really ripe and needed to go- so I decided to make banana nut muffins except that I didn’t have any walnuts like I usually use but I did have almonds – so I use those.
Ingredients:
1 egg
2 cups Original Bisquick™ mix
3 very ripe bananas
1/3 cup sugar
3 tablespoons vegetable oil
1/3 cup miniature semisweet chocolate chips
1/3 cup Almonds, chopped Plus 1 extra whole per muffin.
Directions:
Heat oven to 400ºF.
Grease bottoms of muffin cups (or mini muffin cups) or use paper liners.
Mix eggs and bananas with mixer. Add remainder of ingredients except almonds and chocolate. Mix well.
Fold in almonds and chocolate.
Bake about 20 minutes for full size muffins, 10 minutes for mini, or until golden brown.
