These are TOO cute- you simply MUST make them for your 4th of July BBQ!
Instead of the boring old cupcakes- make these hamburger cupcakes. My kids were too excited to try them- they weren’t quite sure to expect it to taste like hamburgers or cupcakes!
Ingredients;
Vanilla/Yellow Cupcakes
Chocolate Cupcakes
Icing- divided into 3 parts: Yellow, Red, Green or 3 tubes decorating icing in those colors.

I LOVE dipping foods! French Fries into Ketchup, Chips into dip, fingers into icing….
Lowes Foods had a great deal on cream cheese so I was playing on Pintrest looking for recipes to use it up.
I found this great Cheesecake Batter Dip from IwashYouDry on Pintrest , so my daughter & I decided to make it today.
It turned out really good except a little too tangy/sour creamy for us (but we’re picky like that!) Since we’re having company over we thought this would be great to serve for everyone so we doubled some things and reduced some and changed the topping and these are the measurements we ended up with to have a semi tangy but oh so good dip!
Ingredients:
Directions:
Beat softened sour cream for several minutes- until it’s fluffy. You may need to scrape the sides several times to keep it going.
Add the extract and sour cream. Mix until completely combined. Add the cake mix and sugar, continuously mixing until combined.
Fold in the morsels.
We had to try it- so we dipped in strawberries, graham crackers and Nilla Wafers. All were AMAZING.

My dad came home form an Irish Tavern raving about the Scotch Eggs he had eaten and he said that my mom would love them. So she decided to try and make them herself.
They were easy to fix and were delicious.
You will need:
4 hard boiled eggs, shelled
1 lb sausage (any flavor of your choice)
Panko bread crumbs
1 raw egg
Flour

This Tilapia was a huge hit with my husband! I found several recipes online that called for things we didn’t have so I improvised using item in my pantry and freezer!
Ingredients:
4 Tilapia Fillets
1 bag Tortilla Strips for Salads- crushed
2 limes (sliced)
1 jalapeno or chili pepper (personal preference) seeded and chopped.
Dried Cilantro
1/2 tsp Chili Powder
1/4 tsp Ground Cumin
1 egg, beaten
Directions:
Mix crushed tortilla strips, cilantro, chili powder, chopped peppers and cumin.
Dip Tilapia in egg an then dip into coating mixture. Press to get crumbs to stick.
Bake in 375 degree oven until fish is done (approx. 15-17 minutes)
Serve with limes to squeeze juice over fish.

I LOVE Quiznos® subs but sadly there are none in my area any more. So I had to come up with an at home version that would hit that craving!
Here is what I came up with and they sure hit the spot but it does take 24 hours for the chicken to really soak up the marinade so plan in advance!
Ingredients:
Chicken Breast
McCormick Mesquite Marinade Packets
Sub Roll (or french bread)
Fresh Bacon Bits
Cheese of choice
Lettuce
Any other toppings

My daughter is begging me to make them again and the best part is that these literally take seconds to make!
Ingredients:
Mini Graham Cracker Pie Crust
10 mini marshmallows
10 semi-sweet chocolate morsels
Directions:
Preheat Oven to 350.
Mix morsels and marshmallows together (we just tossed them together with our hands)
Bake 2-3 minutes (or until marshmallows begin to toast and chocolate melts)
Eat warm!

Bum’s Green Salad
My mom is a huge salad fan but she gets a little bored so when she pulled this together with what she had on hand- she called me and said it was the absolute best salad she has had! It’s called Bum’s Green Salad because her grandchildren have named her “Bum”.
Ingredients:
1 bunch of Romaine lettuce ripped into pieces
1 green bell pepper chopped
1/2 red onion diced
4 hard cooked eggs sliced
2 Roma tomatoes diced
1 large cucumber diced
Additional Optional Toppings:
Sliced mushrooms
Sliced black olives
Bacon pieces
Feta cheese
Directions:
Toss ingredients together, adding any optional toppings. Top with favorite dressing and serve with crusty bread.

These are SO easy and SO good!
Ingredients:
Canned Cinnamon Rolls
Whipped Cream (optional)
Cooking Spray
Directions:
Pre-heat waffle iron
Spray lightly with cooking spray
Place cinnamon rolls onto waffle iron (Mine had 4 square waffle sections so I did 4 at a time)
Press down lightly as rolls will puff up
Cook until done (about 4-7 minutes)
Serve with the included icing or use whipped cream

Using up leftovers is always an adventure in my house! You never know where that left over steak will show up (tacos anyone?) or the extra corn (rice pilaf?). I use odds and ends of several dinners to come up with a new dish but this is a favorite in my house because it doesn’t seem like dinner but fills us up! I usually serve this with fruit salad or a regular salad that we eat as it bakes!
Ingredients:
Leftover chicken (grilled, roasted, even boiled)
Black Beans (I use leftover)
Tortilla Chips
Sour Cream
Cheese of choice (we use Mexican Blend Shredded)
Salsa
Green Chile Peppers
Optional toppings: jalapeno peppers, diced tomatoes
