We LOVE pasta in my house but were kind of getting burnt out with red sauces. So having a hefty pile of butter in the freezer I decided to try butter in the freezer I decided to mix it up.
This came out so delicious and using fresh summer produce made it even better! You can skip the entire chicken cooking part using precooked chicken strips and cutting it up (even using frozen ones).
- 1 lb chicken breast, diced
- 4 tbsp butter
- salt, pepper to taste
- 1 box fettaccini pasta, cooked and drained
- 1 tsp garlic, minced
- Parmesan cheese (grated, shredded or shaved
- 5-6 grape tomatoes, sliced in half
- 1 green pepper diced
- Season chicken with salt and pepper.
- In saute pan, heat 2 tbsp butter. Add chicken and saute until cooked through.
- Remove chicken and add garlic, tomatoes and green peppers. Saute until soft.
- Add remaining 2 tbsp butter and garlic. Stir for about one minute.
- Add the cooked pasta to the pan and stir until pasta is heated through.
- Replace chicken and toss until pasta and chicken are hot throughout.
- Top with parmesan cheese.
