This was the absolute best fried chicken I’ve ever made. Add to that the biscuit waffles….let’s just say that there are none left!
At my cousin’s wedding recently, one of the appetizers were a small square of waffle topped with a bite of fried chicken. It was delicious and so I decided to make my own version in my own way.
- ( I am not listing measurements because I didn't measure what I used- but I did 8 pieces of chicken and used ¾ of a can of breadcrumbs and 4 eggs)
- Chicken:
- Chicken Breast, sliced thin, brined (3 cups water, ½ cup salt, ¼ cup sugar- mix solution and soak chicken in it overnight-remove chicken, dry but do not rinse)
- Eggs, mixed
- Bread Crumbs ( I used Progresso Italian Bread Crumbs)
- Oil for frying
- Waffles
- Canned Biscuits (or homemade if you are so inclined)
- Waffle Iron
- Cooking Spray
- Chicken:
- Preheat oven to 300.
- Dip chicken in egg mixture and coat well. Dredge in bread crumbs. Place in a single layer in the refrigerator for 2-3 hours, if possible.
- Heat oil in a skillet.
- Place chicken in hot oil and cook until crispy and chicken is done, flipping once.
- When done place on broiling pan and put in oven as the rest of the chicken is cooked. (This allows grease to drain off and crisps the chicken)
- Waffles:
- Preheat waffle iron.
- Spray with cooking spray.
- Place a waffle in each quarter of the iron and close. Do not press too much or the biscuits will be dense and not fluffy.
- Cook until done.
- Serve hot with chicken.
