My twins wanted ice cream cake for their birthday- but we celebrated it on Thanksgiving so we ended up with cupcakes and pie (and they were happy with that) but started to ask again if we could have ice cream cake.
Being me…I couldn’t justify spending $20 on some ice cream and a little bit of cake so we decided to make our own and I am so glad we did! It was so good.
Be sure to line the pan with parchment paper so you can remove it easily once frozen. I just used strips and it worked well!
Layer the ice cream sandwiches – you may need to cut one to make it fit. Smear slightly thawed cool whip over the first layer and top with crushed Oreo cookies. Layer with more sandwiches.
Freeze for several hours until firm. Remove from the pan by flipping it onto the serving tray. Ice with more Cool Whip and Top with crushed cookies. Freeze a few more hours before serving.
- 10 Ice Cream Sandwiches
- 10 Oreo Cookies, crumbled
- 1 tub Cool Whip, slightly thawed
- Line pan with parchment paper.
- Place ice cream sandwiches, cutting where necessary,
- Smear slightly thawed Cool Whip on even layer on top.
- Top with half of crushed cookies.
- Place another layer of ice cream sandwiches on top.
- Place in Freezer until firm.
- Remove by flipping onto a serving tray.
- Ice cake with remaining Cool Whip.
- Top with more crushed cookies.
- Freeze until firm.
- Slice and enjoy.
