My dad came home form an Irish Tavern raving about the Scotch Eggs he had eaten and he said that my mom would love them. So she decided to try and make them herself.
They were easy to fix and were delicious.
You will need:
4 hard boiled eggs, shelled
1 lb sausage (any flavor of your choice)
Panko bread crumbs
1 raw egg
Flour
Directions:
1) Add any seasoning of your choice to the sausage (I just added dry minced onion) and mix it up
2) Separate the sausage into 4 equal parts
3) Cover the hard boiled eggs with flour
4) Use the sausage to wrap the egg entirely- be sure that it seals all around the egg.
5) Beat the raw egg and dip the sausage covered eggs in it
6) Coat the sausage covering in the Panko bread crumbs
I put my eggs in a pan and baked in the oven on 350 degrees for about 45 min but you can deep fry them or fry them in a pan in oil on the stove.
I served them with mustard but you can dip them in whatever you like. Delicious!!!.
