My Mother-in-law is living with us, having such moved here from Mexico. And that means I am getting to learn a LOT of authentic Mexican dishes! Being the chicken I am, I am learning easy (think not-so-spicy) things first! If you prefer you can use a Tortilla press to make them nice and even instead of making them by hand.
Easy Corn Tortillas
Ingredients:
1 1/2 cp Masa Harina
1/4 cp all purpose flour
1 – 1 1/8 cup hot water
Directions
In a large bowl, mix the Masa Harina and flour. Add 1 cup hot water and using hands knead the dough until it is soft. Additional water may be needed to make it stick. Thankfully this is very forgiving and if it becomes too sticky add more masa.
Head a large skillet over medium-high (on our stove we had it at a 7 out of 10)
Pull off a piece of dough large enough to fill your palm. Make it into a dough ball. Then smash flat between your hands. (At this point you could use a tortilla press instead but when I offered one my Mother in Law said that hand shaped taste better!). Then pat and keep patting until it begins to get flatter and flatter.
Once it reaches the thickness and size you want place it on the preheated pan for about 30 seconds each side. They cook quickly!
Keep them warm in a pan with towel over it or in a tortilla warmer. If you’d rather- you can use a Tortilla press to make them nice and flat!
