I grabbed a bag of the La Chona Quesadilla cheese and am going to share my mom hack for turning boring leftovers into a delicious dinner EVERYONE will love- a Quesadilla bar!
The small amount of leftover meats I had wasn’t enough to make a meal for everyone but add in some tortillas, La Chona Quesadilla cheese and a hot griddle- and BOOM- everyone can have a customized quesadilla!
What you need:
All the meats leftover from the past few dinners (we had pulled pork, grilled chicken and some Carne Picada left over)
Bag of La Chona Quesadilla Cheese
Flour tortillas
Toppings of choice (Salsa, avocado, cilantro, black beans, corn salad, quacamole, rice..the options are endless!)
How to make them:
I use a large flat griddle and heat it over medium heat.
Lay a tortilla on the warmed griddle and top with some cheese and then meat of choice and a little more La Chona Quesdilla cheese.
Lay another tortilla on top and cook for about 1 minute or until cheese is melting.
Flip to cook the other tortilla and allow cheese to completely melt.
Cut and serve with toppings of choice.
La Chona Cheeses can be found in your local Food Lion store- mine carries them in the specialty cheese case in the deli!
