I had plenty of pancake mix and the kids were asking for blueberry muffins. A little adjustment and viola- delicious muffins! You could swap out the blueberries for chocolate chips if you want! I think the flavored creamer really took these to the next level of yumminess!
This makes plenty of muffins- it makes over 48 mini muffins or about 24 full size ones so you can divide the recipe or freeze the extras!
To freeze- place individually on a baking sheet and freeze about 2 hours. Then place several muffins in a freezer bag and freeze until needed. Be careful not to smash them with heavier items.
- 2 eggs
- ½ cup vegetable oil
- 1½ cups sugar
- 1 cup milk
- ½ cup vanilla coffee creamer
- 4 cups pancake mix (I used Krusteaz)
- Preheat oven to 375. Beat eggs, oil, milk, creamer and sugar together well. Add pancake mix in one cup at a time, mixing well. Add blueberries and stir gently.
- Spray cupcake tins or use liners. Fill cups ¾ full and bake at 375 for 20 minutes or until golden.

i just made these but substituted non-dairy milk for milk—and splenda for sugar to reduce carbs and tasted great–parve coffee creamer–and parve pancake mix—(parve is dairy free)–tasted great—even my non-kosher neighbors liked it

I love these. I reduces the sugar by 1/2 a cup and mashed a canned pear into the recipe as a replacement. Added an egg, used sugar free creamer and added 2 tsp of baking powder. Reduced the heat to 350 for 24 minutes and they turned out amazing. Thanks so much!!
