I was pretty skeptical that I could make a delicious Mac and Cheese in my InstaPot but I scoured a ton of recipes and picked out what I thought would be the best from each one. Let me tell you this is now MY Mac n Cheese recipe! I don’t think I will ever make it any other way ever again! I put mine in a baking dish and sprinkled with parmesan and baked for just a few minutes to crisp up the edges.
If a pressure cooker scares you – really look at the new ones! They have so many safety features that the old fashioned ones didn’t! I highly recommend the InstaPot for busy families. I’ve taken a frozen roast from freezer to table in just over an hour! It’s the hero of my kitchen!

- Place pressure cooker on saute and stir in evaporated milk.
- Slowly add cheese about ½ cup at a time, stirring as it melts.
- Keep it in low mode for about 5 minutes longer to thicken sauce.
- If you like a crispy topping, remove from the pot and place in a baking dish. Top with breadcrumbs and grated parmesan. Bake at 400 for a few minutes until the top crisps up.
