Wow. These were Ah-MAZING and so easy to make! I got new frosting tips and bags and so had fun playing around with them while making these. I also fell in love with some silicon muffin tins! Where have these been my whole life? And I really wish I had had these super cute cupcake wrappers!
These strawberry shortcake cupcakes were so easy and cute – The only problem is you have to eat them quickly (within a day) or the strawberries get a little too soft.
Ingredients:
White Cake Mix + Ingredients
Strawberries
1 stick butter, softened
1 tsp vanilla
2 cups confectioners sugar
1 tbsp milk or heavy cream
Directions:
Bake cupcakes according to directions. Allow to cool.
Make buttercream icing (beat butter until light and fluffy. Add sugar on medium speed. Slowly add milk or cream and vanilla.)
Wash and Hull strawberries.
Cut the center out of the cupcake.
Insert the strawberry with the cut side up into the cupcake.
Top with whipped cream and a strawberry slice.
