The other night I was trying to decide what to have for dinner. We had a lot of leftovers in the fridge; grilled pork chops, steaks and some chicken breast. There wasn’t enough of each for everyone to have a single item so I decided to mix & match!
I pulled out the steak, chicken and pork chops and chopped them all up. I stir fried them in a little bit of olive oil to crisp and heat them.
Then using leftover lettuce, cheese, sour cream, taco shells and salsa- we made tacos!
They were delicious! By stretching the meat by making tacos- these bits and pieces of leftovers made a meal for 6!

We chop up leftover meat on a salad (even hamburgers!). We use spinach most of the time in place of lettuce in salads, wraps, tacos, etc. It is usually the same price as other bagged salads but lasts past the expiration and is more nutritious. If we haven’t used it up by the time it starts wilting we make a pesto out of it (in place of basil). We use whatever nuts and hard cheeses we have on hand or get on sale along with the garlic and olive oil. We also recently added leftover chicken to a tomato bread salad with mozzarella & basil.
We generally make sandwiches for lunch the next day with our leftover meat but I think I would like tacos better:) Thanks for sharing this awesome tip with us at the Teach Me Tuesday Linky Party! Hope to see you again this week!
