My mother LOVES reubens. Today she’s bringing us her new favorite variety: meatless!
I love anything with sauerkraut on it and I love a good Reuben but sometimes I just don’t want to eat meat. I discovered this meatless Reuben at a restaurant recently.
Ingredients:
- green peppers
- onions
- mushrooms
- swiss cheese
- rye bread (I used marbled rye bread with pumpernickle)
- 100 Island Dressing
- olive oil
- seasonings
Directions:
- Cut up and fry the vegetables in olive oil
- heat up sauerkraut in a separate pan
- butter one side of two pieces of rye bread (you will be frying the sandwich like a grilled cheese sandwich)
- layer vegetables on one of the unbuttered side of a piece of bread
- put on a piece of Swiss cheese
- put on the other buttered piece of bread
- fry until brown
- open up the sandwich and add sauerkraut and 100 Island Dressing
This is absolutely delicious! I am trying to think of other vegetables that could be added to this sandwich.
