Honestly usually I am lazy and use Betty Crocker boxed potatoes but the other night I decided to go all out and make Scalloped Potatoes from scratch- I used my Mom’s recipe and made it my own!
- 4 large potatoes, sliced very thin (I used this mandolin slicer)
- 3 tbs butter
- 3 tbs flour
- 1½ cups milk
- 1 teaspoon salt
- 1 dash black pepper
- 1 dash red pepper flakes (if desired)
- 2 cup cheddar cheese (the sharper the better- set aside ½ cup to top it off)
- paprika
- Grease casserole dish.
- Preheat oven to 350°F.
- In small sauce pan, met butter.
- Blend in flour well. Add cold milk, whisk well.
- Season with salt, pepper, red pepper flakes.
- Cook on low, whisking until smooth.
- Remove from heat and blend in 1½ cups cheese.
- Mix well.
- Put half of the potatoes in the casserole dish.
- Pour half of the cheese sauce over potatoes.
- Place remaining potatoes in dish and pour remainder of cheese sauce over top.
- Sprinkle grated cheese on top and top with a dash of paprika.
- Bake for 1 hour.
