My family went to a nice BBQ restaurant here in Raleigh for my sister’s birthday. Instead of bread or biscuits they brought hush puppies to the table before the food arrived. They didn’t last long at the table.
All day long I’ve craved hush puppies. So I decided to see what I had lying around to make some. Thankfully I have my favorite deep fryer at the ready always!
Ingredients:
1 pkg Jiffy Corn Muffin Mix
1 egg
1/3 cup milk
1/4 cup flour
1/4 onion, finely chopped
1/2 tsp salt
Oil for frying
Directions:
Combine mix, egg, milk, flour, onion and salt.
Mix well
Drop by rounded teaspoon into hot oil.
Fry 4 minutes (turning half way) until golden brown.
Drain well and serve.

What temp were you cooking at? I tried several common frying temps and either had blackened hush puppies or they still came out gooey and raw in the middle.

Yes, I cooked these last night and chopped up a roasted pork shoulder with Scotts BBQ sauce. Yeah I’m a Raleigh girl…and it was on! I made coleslaw too. Yummy! My family want a repeat meal 😋

You could try using a nut milk or oat milk and make a flax egg. 1Tbl ground flax seed and 2Tbl water. Let sit to thicken for 5 to 10 minutes.
