Ok YUM. Yum. Yum. That’s all I can say about this! It was so easy too!
The best part is that Harris Teeter has their dough balls on sale for $1 each this week so skip the kneading and get a head start on making these Chicken & Peppers Calzones! You could even sub in canned chicken instead of cooking fresh.
- 16 oz Pizza Dough (homemade or refrigerated)
- 3 eggs
- 1 Cup Ricotta Cheese
- 1½ cup mozarella cheese, shredded
- ½ tsp oregano
- ½ tsp basil
- Pinch red pepper flakes
- Salt
- Pepper
- Cooked Diced chicken, about 1 cup
- 1 Bell Pepper, diced
- ½ small onion, diced
- Preheat oven to 425F.
- In a skillet with a little olive oil saute the pepper and onion.
- Salt and Pepper.
- Once cooked until soft, add the chicken to the pan and stir.
- Divide dough into 4 pieces and roll or pat into 4 circles.
- Mix 2 eggs, ricotta, mozarella, oregano and basil together. Reserve some basil and oregano for topping.
- Smear the cheese mixture on half of each dough circle.
- Top with chicken, peppers and onions.
- Fold the dough over and pinch edges closed with a fork.
- Beat the remaining egg.
- Brush over the top of dough and sprinkle with oregano and basil and red pepper flakes.
- Place on a lined baking sheet and bake 20 minutes or until crust is golden brown.
- Serve hot with marinara sauce for dipping.
