We had a pint of blackberries that were getting a little soft so we decided to make a grilled dessert – they were so delicious and I was so happy that we didn’t have to dump them in the compost pile!
- 2 cup fresh blackberries
- 3 tbs water
- 4 tbs sugar
- 2 Peaches, halved and pitted
- 2 tbs butter, melted
- Vanilla Ice Cream
- Heat the grill to medium heat.
- In a small sauce pan, smash blackberries. Add water and sugar and heat over low heat. If you want a smoother sauce, use a food processor to puree the blackberries before heating.
- Brush peach halves with melted butter and grill peach halves for 5-10 minutes. Be careful not to char the peach but you want it soft.
- If necessary, turn the grill burners off to cook a little longer with indirect heat.
- Serve peaches topped with ice cream and blackberry sauce.
